In the surroundings of Andria, near Bari in Apulia, at an altitude of 250 metres a.s.l., lies the farm GIANCARLO CECI, run for the last eight generations with the greatest respect for nature and traditions. The Mediterranean climate, the location amidst a landscape of low hills, the presence of oak woods, the non-intensive cultures contribute to preserve the biodiversity and the precious balance of this ecosystem.

Winemaking: SOIL: not very deep soil, very permeable, fairly rich in limestone and rocky layers. PLANTING DENSITY 5000 plants/Ha. TRAINING SYSTEM cordone speronato (rows of wine). VINIFICATION TECHNIQUE soft crushing, controlled-temperature fermentation at 25-26°C, pumping-over and delestage, maceration on skins for 15-18 days. AGING TECHNIQUE In steel tanks followed by 1 – 2 months of aging in bottle before commercial release.

Organoleptic Characteristics

  • Colour: Deep ruby red.
  • Nose and flavour: Intense and complex nose with fruity notes of bitter orange and cherries under alcohol, together with spicy sensations of cinnamon and fresh hints of mint.

Suggestions

  • Serving Temperature and Food Matching Serving temperature: 16-18°C.
  • Recommended with: Soups, pasta with ragu sauce, lasagna, meat and aged cheeses.
