Old vineyards, planted in small plots of granitic soil and withstand the harsh climate of the Sierra de Gredos. Everything done using organic viticulture techniques, with respect, patience and hard work. The rest is simply wine.

Winemaking: Albillo Real from the village of San Martín de Valdeiglesias. Several small vineyards with granitic soils, different orientations and altitudes between 650 and 750m. The vineyards are located within a ZEPA (Special Protection Area for Birds) and the Natura 2000 network. Dry-farmed vines, trained in goblet training and cultivated in the traditional way.
Harvested by hand in 15 kg crates, direct pressing of the whole grapes, spontaneous fermentation and ageing for twelve months in French oak barrels without batonage.

Organoleptic Characteristics

  • Colour: Golden yellow.
  • Nose and flavour: It is a floral and fresh white with some spicy and herbaceous notes, expressive and a little wild. It is elegant, nuanced and complex, very young and with the complexity of the medley of vineyards used.

  • Serving Temperature and Food Matching Serving temperature: 7-10°C.
